Matthews Cotswold Strong Stoneground Wholemeal – a strong wholemeal flour, which has been stoneground to create a wonderfully wholesome flour perfect for wholemeal bread
Strong stoneground wholemeal flour, traditionally milled using 100% of the whole wheat grain. The entire wheat grain, including the nutritious bran and germ remain intact as we slowly stoneground mill high protein wheat to give a very strong 14.5% protein flour which helps the bread rise when baking. The naturally high gluten in this flour produces beautiful wholemeal crusty bread with a unique rustic stoneground flavour.

Milling and Provenance: Stoneground milling is the ancient way of milling and before the mass introduction of roller mills was the main way flour was produced with thousands of water mills and windmills all over the UK. In Shipton-Under-Wychwood 1000 years ago there were 6 Shipton mills, today there is only one mill at Shipton still run by the Matthews family. The present-day Matthews Stone and roller mill is located 50 meters from the river evenlode and the site of an old watermill. The reason for the move was to be nearer the connecting rail track built in 1845. We source naturally high protein wheat from our local Cotswold Grain Partnership to produce a superior 14.5% wholemeal flour. The natural high gluten produces a beautiful crusty bread with a unique rustic stone ground flavour.
Top wholegrain baking tips: 100% Wholegrain flour absorbs more water, so a bit of extra kneading is sometimes required. Blending with a Churchill Strong white will help give it a bit more of a rise. Blending wholegrains with ancient grain flour and Heritage flour will develop a taste profile.

We're pleased to be able to offer our decanting services, allowing you to purchase a smaller quantity of flour before committing to a larger 16kg or 25kg sack.
Please note: All smaller quantities that are purchased (less than 16kg or 25kg) are decanted by our trained staff into food-grade, recyclable flour bags in our 5* hygiene-rated premises. All decanted bags will come fully labelled with product name, expiry/BBE date and production/batch number.
Larger sacks are made from fully recyclable unbleached paper. Our decanted food-grade flour bags are 100% recyclable and biodegradable.

If purchasing Gluten-Free flours, the product contains no gluten, but it is not packed in a gluten-free environment. However, we make every effort to ensure no cross-contamination occurs. Please be aware that if you order Gluten-Free flour at the same time as other flours, they may be packed together in the same box.
We dispatch orders 5 days a week (Monday - Friday, *excluding bank holidays).
Our same day dispatch cut off time is 2pm. Any order placed after 2pm will be dispatched the following working day. Any orders placed after 2pm on Friday will be dispatched the following working day (normally Monday, *excluding bank holidays).

With a milling legacy spanning eight generations, Matthews Cotswold Flour is one of the UK’s oldest family-run flour mills. Trading grain and milling flour in the heart of the Cotswolds since the 1800s. The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s not a bad office view!
The Matthews family have spent over 100 years developing, improving and innovating to consistently produce the very best flour and baking products. Today, the company is led by father and son team Paul and Bertie Matthews – FWP Matthews’ great, great grandsons. This sustained passion and expertise passed down through generations, continues to inform every step of our process – from our local ethos to our traditional methods.
