A classic, plain white all-purpose flour for everyday baking. The highest-quality soft wheats are milled to a fine consistency to create a versatile flour for cakes and bakes.

Provenance & Milling: We source our soft wheat from our local Cotswold Grain Partnership. The fields surrounding the mill are great for soft wheat flour. We prepare our grain in 100-year-old pinewood bins before milling. Soft wheats are best for culinary flour, like Plain Flour, Pastry Flour, Cake Flour and Self-Raising Flour. All our flour is unbleached.

Recipe Recommendations: Cookies, Muffins, cakes, pastry dough, scones, shortbreads, Banana bread, doughnuts, Focaccia, soda bread, vegan naan bread. Apple cake, Chocolate-Dipped Biscotti and many delicious sweet and savoury products, crepes.

Did you know? Our Cotswold Plain white flour in the 16kg Plain Flour Bakers Bag version is called Rollright after a local village where the ancient Rollright stones lie on top of the hill. All our Cotswold Flours are named after local villages surrounding the mill.

Trading grain and milling flour in the heart of the Cotswolds since the 1800s. We believe passionately that our local farming partnerships, traditional milling methods and premium grain selection make for better baking.

Generations of farming families

The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s not a bad office view!

The Matthews family have spent over 100 years developing, improving and innovating to consistently produce the very best flour and baking products. Today, the company is led by father and son team Paul and Bertie Matthews – FWP Matthews’ great, great grandsons. This sustained passion and expertise passed down through generations, continues to inform every step of our process – from our local ethos to our traditional methods.

Ratton Pantry is a family business run by two very keen home bakers and cooks, Victoria and Sean.
