Flour coming from durum wheat is called re-milled semolina. Traditionally it was mainly produced in the regions of Southern Italy, but now its production has national distribution. It differs from that of soft wheat both for its more pronounced grain size and for its characteristic amber-yellow color, a color that also affects the products obtained with it. 

Petra 8612 Semolina is mainly used for the production of bread and pasta (both homemade and industrial) but also for typical sweets.

 

Features:

Durum wheat, rich in carotenoids, is one of the most popular cereals in the world. It is mainly used for the production of pasta, to which it gives a straw yellow color and an intense aroma. It can also be used in the production of bread and pizza.

 

Type of Grinding:

Cast iron cylinder cake.

The long cylinder milling diagram is designed in such a way as to be able to best respect the characteristics of the starting grain. Thanks to the constant control of the grinding parameters, Petra® 8612 is characterized by excellent technological stability.

The grinding technologies allow to obtain a semolina that is easy to work and constant in granulometry.

 

Method of use:

For fresh semolina pasta: it is recommended to use 450g of water for every kg of flour.

For drawn pasta: we recommend using 350g of water per kg of flour.

For bread and pizza: it is recommended to use the flour in combination with re-milled durum wheat semolina (Petra 8610 HP) or with a strong soft wheat flour (Petra 1 HP or Petra 0102 HP).
