This grade of flour, also known as double zero flour or doppio zero, is a finely ground Italian flour commonly used to make pasta and pizza dough. In Italy and other parts of Europe, grind sizes vary from double zero to two, however "00" is the finest ground, producing a lovely soft, fine white flour due toi its low ash content.
Shipton Mill's Type "00" Flour is essentially a specialist pizza and pasta flour, however it can also be used to make breads or high quality pastries and Viennoiserie.
Try using Shipton Mill Fine Semolina when making pasta and pizza. Semolina is useful for dusting work surfaces or pizza f=peels to avoid dough sticking, and some bakers like to incorporate it into the dough as a blend.
