An Organic wholemeal rye flour used to make dark rye breads. Some Master Bakers use dark rye flour for making the "sponge" used in traditional rye doughs. Suitable for any recipes requiring a dark rye flour.
Rye flour contains enough gluten to make a yeasted loaf on its own, and tends to produce dense, dark, richly flavoured bread. It's often mixed with wheat flour to produce a lighter style of loaf. Rye flour's intensely fruity flavour is delicious incorporated into fruited cakes and sweet quickbreads such as scones.
Rye became a staple food in Europe during the Middle Ages, where it was cultivated in Central and Eastern Europe and was used to produce both bread and alcohol.
