Ein’korn, or triticum monococcum, is the only wheat never hybridized and has only two sets of chromosomes. It's grown organically and tested for glyphosate. Its weak gluten makes it easier to digest. It lacks the gluten proteins that trigger symptoms of gluten sensitivity. It is higher in protein and lower in carbohydrates than modern wheat.
Einkorn differs from modern wheat in that it is genetically distinct and only has single grains on either side of the ear, hence its name Ein’korn from the German 'ein' meaning one.
Grains of the wild form were traced back to tens of thousands of years ago, and the first domestication of wild einkorn was recorded approximately around 7500 BC. It is believed to originate from the fertile areas of the Tigris-Euphrates regions.
Today we love making flours from these extraordinary ancient grains and strive to preserve and promote these rare and unusual varieties to protect this extraordinary Biodiversity.
Biscuits and cookies turn out amazing when Einkorn is used. It also provides a lovely flavour when added to bread loaves and pastry bakes. Try blending it with other white flours to make it easier to handle if you're new to baking with einkorn but are still keen to experiment with this wonderful flour.
