What makes Organic Traditional White Flour special is that it's milled from the perfect blend of beautiful English heritage grain called Maris Wigeon and Organic continental wheats, making it the perfect organic option for yeasted breads and of course, sourdough.
This flour works very well on its own as a standalone flour but also gives excellent results when mixed with other wholemeal flours to give a more wholesome and characterful loaf.
Maris Wigeon is very well suited to organic and regenerative farming systems and, although the yield of this heritage crop is less than half of modern wheat varieties, it is prized for its exceptional quality and taste.
