A wholemeal rye flour used to make dark rye breads. Some Master Bakers use dark rye flour for making the "sponge" used in traditional rye doughs. Suitable for any recipes requiring a dark rye flour.
Rye flour contains enough gluten to make a yeasted loaf on its own, and tends to produce dense, dark, richly flavoured bread. It's often mixed with wheat flour to produce a lighter style of loaf. Rye flour's intensely fruity flavour is delicious incorporated into fruited cakes and sweet quickbreads such as scones.
Rye became a staple food in Europe during the Middle Ages, where it was cultivated in Central and Eastern Europe and was used to produce both bread and alcohol.
