Shipton Mill's founder, John Lister, visited the 18th century mill of Michelbacher Mühle, west of the ancient city of Cologne, in order to learn how to mill this traditional rye flour.
Paler in colour than Dark Rye, which is due to the way in which the grain is milled. More bran is sifted out than when dark rye is milled, producing a more refined flour, lighter both in terms of colour and consistency.
Use this light type of Rye flour for light rye breads, which produces a lighter crumb and less dense texture than some of the dark ryes.
