Diastatic Malt Flour, sometimes known as Diastatic enzyme active malt flour, is a product made from malted barley. Commonly used to soften the crumb of bread or give a darker crust colour, diastatic malt flour gives these results without the need for adding additional sugar.
DIAX Diastatic Malt Flour is particularly useful with long fermentation doughs, where diastatic malt flour helps to improve the fermentation vigour. Great with long ferment and cold fermented bread dough and pizza dough.
We recommend incorporating only a small proportion, up to 0.5%, in your mix, to avoid your load from becoming sticky.
